New School Mexican Eats

Chilte, once a pop-up phenomenon, has quickly transformed into one of the most exciting restaurants in the Valley, and it's easy to see why. Located in downtown Phoenix, inside the Egyptian Motor Hotel, Chilte brings a fresh take on traditional Mexican cuisine, merging cultural authenticity with bold, modern flavors. At the heart of this culinary marvel is Chef Lawrence "LT" Smith, who masterfully reimagines classic Mexican dishes with a twist. His innovative approach has not only earned Chilte a spot on prestigious best restaurant lists like Bon Appétit, Esquire, and Mashed, but Chef LT himself was named one of the 2024 Best New Chefs by Food & Wine.


Chilte’s story is rooted in rich Mexican traditions, with Chef Lawrence drawing inspiration from his family, the deep heritage of Mexican cuisine, and the vibrant Arizona food scene. He combines these influences to create something truly unique, an experience that feels both familiar and completely new.


During my visit, I had the chance to experience several standout dishes that perfectly encapsulate Chilte's blend of tradition and innovation. I began with a sampler that included plantains, fresh cucumbers, and an outstanding pickled ceviche featuring mussels, each bite offering layers of fresh, bold flavors. The Santa Quesadilla was a revelation, wrapped in a leaf and served with a bright salsa verde, delivering both visual appeal and exceptional taste. Another favorite was the Carne Apache, a vibrant and fresh dish of premium ribeye paired with a refreshing papaya salad and a crispy tostada, a perfect example of how Chef LT marries classic ingredients with creative flair.


The Mole De La Casa was a true highlight, boasting one of the boldest and most flavorful mole sauces I’ve ever had. Rich, complex, and deeply satisfying, it’s a must-try for anyone who visits. And just when you think the meal couldn’t get any better, the desserts at Chilte will make sure you leave on a sweet note. I highly recommend saving room for their house-made cheesecake or the unique and indulgent sweet potato ice cream.


From its humble beginnings to becoming one of the most celebrated dining spots in Phoenix, Chilte offers an unforgettable culinary journey that honors the past while embracing the future.
